Peanut Butter Protein Balls

I don’t know about you, but fast, quick, and easy (and healthy, of course) are qualities I like in a good snack.

In my humble opinion, if you like peanut butter, you can’t go wrong with peanut butter protein balls! You have the peanut butter goodness that will crush even the biggest peanut butter pie fan’s cravings (and I do believe I could claim this title). Add a healthy boost of protein this deliciousness and you’ll be on your way to healthy snacking in hurry.

Speaking of being in a hurry, I feel like that is somewhat the norm around here these days. That’s why it’s so important to find a good, healthy snack that can be whipped up in a Jiffy (see what I did there?!).

Protein balls fit the mold for the fast, quick and easy requirement because most of these ingredients we have on-hand in the pantry and the simplicity of throwing all ingredients in a bowl and stirring, really, can’t be any more of a cinch.

I decided to actually measure these ingredients out this time as this is typically not my style - I like the “little bit’a this & a little bit’a that” method… but that, obviously, isn’t great instruction if you are trying to make something you may have never tried before.

When I’m not doing a video or multitasking with the kiddos, it takes me about 7 minutes from start to finish to rock these out and clean up afterwards.

Booyah! That’s what I call simple-sauce!

What’s your go-to healthy snack?

1/2 c. natural peanut butter
1/2 c. vanilla protein powder 
1/3 c. coconut flour
1 tsp pure vanilla extract
1/4 tsp cinnamon
2-4 Tbsp almond milk
2 Tbsp dark chocolate chips or cocao nibs

1. Stir PB and protein powder, then add coconut flour and stir.
2. Add vanilla extract, cinnamon and stir.
3. Add almond milk, one tablespoon at a time until batter is sticking together enough to roll into balls
(you don’t want the batter to be too sticky/wet, or you won’t be able to roll them into balls… if this happens, you can consider this an edible-type of cookie dough)
4. Add chocolate chips
5. Roll into 1 inch balls
6. Enjoy!
